How to make
Weigh out 2 to 3 grams of oolong tea leaves. Infuse the leaves in a teapot or gaiwan filled with freshly-boiled water for two to three minutes. The same leaves can be used to re-brew many more cups of tea, until the flavour from the leaves has been exhausted.
As legend has it, this tea originates in the Ming Dynasty, when the mother of an emperor was cured of illness after drinking some tea harvested from tea bushes on a rock on Wuyi Mountain. The emperor sent big red robes to surround the bushes from which this magical tea was grown. Six of the original bushes are still standing today, and the tea produced from them is highly celebrated.
